Features: semi-cooked sheep milk cheese, exclusively made with full-cream organic sheep milk, thermised at a temperature of 63°C; 

Shape: cylindrical; 

Type of paste: soft after 2/3 months from the beginning of the aging process, then compact, white, slightly yellow when more aged; 

Production area: Sardinia; 

External appearance: smooth crust, without any treatment; 

Flavour: delicate, savoury and stronger with the continuation of the aging process; 

Aging: at least 2 months at a temperature of 14°C (humidity level: 80-83%); 

Size: 16 cm in diameter; 

Weight: from 2 to 2.2 kilos; 

Packaging: in cardboard boxes containing 1 or more cheese wheels;
